Earlier this year, local eatery the Little Red Wagon Winery in Clarendon was featured in a video by renowned Ottawa chef Mat Beausoleil for his show Cooking Adventures Outaouais. The show features various chefs and cooks from across the region sharing their specialties with Beausoleil.
During the episode Beausoeleil got a hands-on lesson from the winery’s kitchen manager Emma Judd on how to make their bacon blue cheese flatbread.
Judd said that cooking on camera was a unique experience, though she said that the recipe was relatively simple.
She said that while the item is one of her family’s personal favourites, it can be a challenge to keep people from swapping out the blue cheese.
“I say, ’You can’t taste the blue cheese, it just tastes salty,’” she said.
