New chef, new menu at the Bryson’s Bistro du Bûcheron
There’s a new chef in charge of the kitchen at the Bryson’s Bistro du Bûcheron in Fort-Coulonge. Peter Illias, a Montreal chef with 37 years in the industry, will be heading up the back of house at the bistro, which is attached to the Pontiac Conference Centre and the Spruceholm Inn.
Illias spoke to CHIP 101.9 about why he chose to come to the Pontiac and also his experience, which includes designing menus for restaurants such as the Bâton Rouge chain.
Illias also mentioned that he was inspired by the bistro’s premises as well as the history of the Pontiac and wanted the menu to reflect that by using local ingredients.
The restaurant will be open for lunch and dinner from Wednesday to Sunday and will also offer an à la carte brunch on Sunday morning.
